Part of “the new normal” due to COVID-19 is ordering take-out or cooking at home. While there still are no events to report on our usual Bulletin Board, we continue to share recipes from Honpa Hongwanji Hawaii Betsuin’s nostalgic “Favorite Island Cookery” cookbooks, which were published in the 1970s. They were favorites in the 1970s, and they’re still favorites in 2020. Enjoy!

From: “Favorite Island Cookery” (Book 3)

Bake: 400 degrees
Time: 10-12 min.

Ingredients

4 cups flour
1 tsp. baking powder
1 ¼ cups butter or margarine
1 box (3 oz.) gelatin (any flavor)
1 cup sugar
1 egg
1 tsp. vanilla

Sift flour with baking powder. Cream butter gradually. Add sugar and gelatin. Cream well after each addition. Add egg and vanilla. Beat well. Gradually add flour mixture, mixing well after each addition until smooth. Roll into balls and press with fingers. Bake.
