1 cup azuki beans
2 cups water
4 cups mochi rice
1 cup regular rice
4 cups azuki water — if not enough, add water to make 4 cups
2 tsp. salt
¼ tsp. red coloring
Black sesame seeds and salt for sprinkling

Cook azuki in water. Drain and keep liquid. Set azuki aside. Wash rice and drain well. Add azuki water and let stand for 30 minutes. Add salt, coloring and cooked azuki beans. Mix well. Cook in automatic rice cooker or any other rice cooker. Sprinkle salt and black sesame seeds just before serving. Note: If Toshiba cooker is used, add 1 ½ cups water in the outside pot. Do not overcook your azuki (should be whole, mashed).
